Grand Marnier Souffle
- 2oz Grand Marnier
- 1 1/4 cups of sugar
- 4 large eggs
- 4 large egg yolks
- 4 egg whites
- pinch of salt
- 1/2 cup flour
- zest of one orange
- 3 teaspoons of melted butter
Butter & sprinkle with 1/4 cup of sugar 10 ramekins
In a mixer at high speed beat sugar, eggs, yolks & salt until batter falls in a heavy ribbon. Sift flour over the mixture & fold in. Gradually fold in orange zest & Grand Marnier. Whip the 4 egg whites until fluffy & fold in. Place in a water bath & bake @ 400 degrees for 12-15 mins
