Grand Marnier Souffle
2oz Grand Marnier, 1 ¼ cups of sugar, 4 large eggs, 4 large egg yolks, 4 egg whites, pinch of salt, ½ cup flour, zest of one orange, 3 teaspoons of melted butter.
Butter & sprinkle with ¼ cup of sugar 10 ramekins
In a mixer at high speed beat sugar, eggs, yolks & salt until batter falls in a heavy ribbon. Sift flour over the mixture & fold in. Gradually fold in orange zest & Grand Marnier. Whip the 4 egg whites until fluffy & fold in. Place in a water bath & bake @ 400 degrees for 12-15mins
