Beef Stroganoff served over Coral Pasta

Beef Stroganoff served over Coral Pasta

Serves: 4

Prep/Cook Time: 20-30 minutes

Ingredients You Will Need:

1-1 1/2 lbs. tenderloin beef tips, cubed

2 cups all purpose flour

1 yellow onion, chopped

1 lb sliced mushrooms

2 carrots, peeled and sliced into 1/4 inch

5 TBL paprika

1 TBL beef base, melted into 2 cups of warm to hot water

1/4-1/2 cup sour cream

3 TBL butter

Olive oil to sauté

1 package designer corals, cooked to package directions

In a large deep skillet, over medium high heat, melt butter and oil together, enough to cover the pan about 1/4 inch. Add to it, the onions and sliced mushrooms and cook for about 3 minutes. Meanwhile, dredge beef tips in all-purpose flour and add to skillet. Add more oil if needed. Allow the beef to brown on all sides, adding then the 2 cups of beef broth. Stir while sauce begins to thicken. Add in the carrots and cook until carrots are also soft. Take skillet off the heat and fold in the sour cream and paprika Serve over the cooked coral pasta, garnish with parsley, and enjoy!
