Baked Red Snapper with Roasted Red Pepper Sauce

Season snapper with salt, pepper, oil & baked at 350 degrees for 12-15 mins. In a sauce pan add, olive oil, diced peppers, sliced mushrooms and saute until tender. Add 1 teaspoon of our roasted red pepper paste and simmer for 3- 4 mins. Add a little wine and lemon juice if desired. Once the fish is done, place on plate and top with the sauce. Serve at once.
