Marinated Pan Seared Duck Breast
1 6oz Duck Breast, Chopped garlic ½ teaspoon, Fresh chopped rosemary ½ teaspoon, cracked black pepper ½ teaspoon, 2 oz olive oil, 4 oz red wine, cornstarch 2oz, 4 oz water.
Score the duck breast on the fat side marinated the duck with the oil, garlic, pepper and rosemary for 12 hours. Pan sear the duck fat side until crispy, then turn and brown. Remove from pan and place in 300 degree oven, bake 10-12 mins for medium. Deglaze the pan with the red wine and then tighten the sauce with the cornstarch and water. Simmer, slice the duck and drizzle the sauce oven it.
